Cheddar butter is a rich, savory spread made by whipping together equal parts butter and sharp cheddar cheese. It’s smooth, creamy, and packed with flavor, making it perfect for serving with sourdough bread, crostini, or alongside a cheese board.
Take the butter out of the fridge around 10 minutes before you want to make this recipe.
Once the butter has softened a little, chop the butter and cheddar cheese into chunks and add it all to your food processor (don't try this in a stand mixer as it's not strong enough to whip the cheddar cheese).
Whip the butter and cheddar cheese until it's luscious and creamy and looks like butter. This will take around 1 to 2 minutes, depending on how powerful your food processor is. The color it turns will really depend on the type of cheddar you use, it could be anywhere from pale yellow to bright orange.
Scrape the whipped cheddar butter into a bowl and serve with sourdough crostini or sourdough French bread.
